Being locally owned and operated, we encourage everyone to support local communities and help out the environment by purchasing locally produced goods. This recipe, from our Cookbook, A Local Table, features locally grown blueberries and peaches, now in season throughout British Columbia.
Ingredients
Filling: 5 cups of fresh blueberries 4 small peaches, pitted and cubed 1/2 lemon, juiced 1/4 cup cornstarch 1/2 cup sugar 1/8 tsp ground cinnamon
Topping: 2 cups Anita’s Organic Rolled Oats 3/4 cup sugar 1/2 cup butter
Directions
1. Preheat oven to 400°F
2. In an oven-safe 8" x 8" glass baking dish, mix together all ingredients for the filling
3. In a medium mixing bowl combine rolled oats and sugar then cut in butter until mixture is coarse and crumbly
4. Spread topping evenly over fruit filling. Bake for 55 minutes then serve warm.
Serves 6.
